Rabbit Sweet and Sour

1 or 2 rabbits jointed
1 432g tin pineapple pieces
1 green pepper chopped
8 tomatoes chopped
1 onion finely chopped
1 tbls soft brown sugar
2 tbls wine vinegar
2 tbls soy sauce
salt and pepper
1 tbsp cornflour

METHOD:-

Sweet 'n' sour rabbits 3Kb

Place all the ingredients except the cornflour into a heat proof dish simmer gently on top of the stove for 1 hour or until the meat is tender.

When rabbit has cooled remove meat and chop into small pieces.

Mix cornflour with a little water add to heat proof dish bring to boil stirring all the time.

Then add the pieces of rabbit back in the dish with the sauce, reheat and pour into a serving dish.

Serve with boiled rice or pasta and salad.
